Every commercial kitchen in Northern Ireland that produces fats, oils and grease (FOG) is expected to stop that FOG entering the public sewer. In practice that means a grease trap or interceptor, kept in working order, with records to show it. Blocked sewers and pollution incidents can lead to enforcement from NI Water and the council, and the clean-up costs land on the business.
The problem is that a grease trap only works if it's maintained. FOG cools, hardens and coats the inside of the trap and the pipework beyond it. As it builds, the trap loses capacity, starts to smell, and eventually overflows FOG downstream — which is where blockages and pump-out invoices come from. Most kitchens deal with this purely by pumping the trap more often, which is expensive and treats the symptom, not the cause.
A biological maintenance programme changes the economics. DGTT (Drain & Grease Trap Treatment) is a concentrated liquid bacterial formulation dosed on a schedule sized to your trap volume and kitchen load. The bacteria digest the organic grease and food residue in the trap and the connected drain lines, so build-up slows, odour drops, and pump-out intervals become longer and more predictable.
It's important to be clear about what this is and isn't. Biological dosing is not a substitute for having a correctly sized trap or for your scheduled pump-outs — it's what keeps the system working cleanly between them, and what stops FOG migrating down the pipe. It also isn't a harsh biocide; the product itself is 100% biological.
For groups with multiple sites, the real value is standardisation: one dosing programme, one supplier, predictable maintenance across every kitchen, and far fewer emergency call-outs. That's usually where a rollout pays for itself.
